Paul and Patty Hoover established Still Waters Vineyards in the spring of 2003. It is a small, family run winery featuring all estate, hand-crafted, artisan wines and estate olive oil. Longtime San Luis Obispo County residents and Cal Poly graduates, the Hoovers always held a passion for growing and making award-winning wines as a hobby. This hobby turned to obsession with the purchase of 60 planted acres in the rolling hills between Paso Robles and Creston. As a home winemaker, Paul missed having complete control of the fruit as he took it from the vineyard to the bottle. His motto has always been,"Great wine comes from great grapes" and so with the purchase of the ten year old vineyard, he could attain that goal.
The Hoovers met while water skiing on the "still waters" of a glassy lake, and have created a landscape reminiscent of an outdoor retreat, where guests can relax near a brimming koi pond, share a picnic in the shade of a century-old olive grove, and soak up the serenity of a small family farm. The family of Still Waters, led by longtime manager, Kasey Helt, hopes their guests will connect with the land that produces the winery's estate grapes and olive oil. They even invite their guests to share in their complimentary farmer's market as they enjoy the half-acre garden full of fresh fruits, vegetables and herbs lovingly tended by Carlos. The tasting room invites visitors to amble across a shaded porch into the tasting room which resembles a cozy living room with sofa, fireplace and copper kitchen fixtures.
The vineyard consisted of Cabernet Sauvignon and Merlot vines that had been planted in the late 1990's. Paul quickly grafted in ten acres to include their new varietals: Syrah, Malbec, Cabernet Franc, Petite Sirah, Zinfandel, Chardonnay, Sauvignon Blanc, Pinot Gris and Viognier. Paul and crew set out to retrain through pruning techniques the existing plantings to produce lower and more balanced yields. Still Waters is proud of their program of canopy management, sustainable growing practices and a gentle winemaking process that is centered on very small 100-gallon open top fermentors. This process has created the perfect balance between fruit in the fields and wine in the bottle.
Current production at Still Waters Vineyards is less than 5000 cases. Their fully custom wine club is a popular choice for many tasting room guests. The beautiful facilities are also available for private parties, weddings and events. The Still Waters Vineyards philosophy shines through in their motto, "Be small, have fun and focus on quality".
