About the Owner/Winemaker
Gianni Manucci, grew up in Santa Cruz, CA. and in his first life, owned his own architectural firm for over twenty years. But, his true roots in grape farming began in Europe over several generations ago which inspired him to get back to his roots "his second life" in 1995. His hands-on personal skills shine in this landmark 40-acre terraced hillside vineyard, and his UC-Davis oenology education has gained him many enthusiasts among his Club members. Gianni's unique sense of balance has also transformed his vineyard into a Pueblo village with ancient adobe style architecture, an art colony/retreat, Native American cultural spirit, and winemaking, all harmoniously create a balance at his winery.
Gianni’s appreciation of the Native American cultures, since childhood, has significantly impacted his life and believes. He has become close friends with many tribes and natives, particularly with the Taos Pueblo Indians. His goal was to retire in Taos, but since it was not favorable for grape growing, he then decided to bring Taos to Paso Robles so he can feel at home. Both Gianni & his wife Kati are artists at heart. Just about everything you’ll see at their site is designed and built by them. Their hand prints are all over from the design & architecture, construction, landscaping, interior decor, stone sculpture, pottery, painting, etc. “It is all about labor of love for the things we are passionate about in life”.
"Wild Coyote" simply comes from a pack of coyotes that hunted on his land before it became a vineyard. This combined with our greatest respect for all living beings (especially coyotes with so many colorful mythical traits) was the cornerstone of our trademark label.
We believe, to be a farmer first and then a winemaker. As my grandfather used to say “if you grow good grapes, you'll have good wines”. Since the old days of winemaking is long-gone, and most wines are now mass produced with emphasis on taste and price. We decided to trademark ourselves as "full blooded” meaning we do everything on one site and under our control; from growing the grapes, to harvest, processing, winemaking, storage, and selling from our tasting room only.
To us it is all about being small, but be the best at what we do. Even if it means that we focus on our 19 acres of grapes, and less than 2,000 cases in total production annually, then so be it. To us, quality is more important than quantity “and up here it's all about pounds of grapes per vine not tons per acre.” That is why we began at the roots, by transforming our land by pushing through the rocky limestone topography and terracing the hillside similar to the old-world European style. The winery is a vineyard driven operation and we focus lots of our energy into producing the highest quality grapes possible. Also, we try to be very respectful to the Mother Earth, by practicing sustainable agriculture, using solar power, encouraging natural habitats, and recycling rain water, etc.
Our Tasting Room.
Live through our spectacular mountaintop panoramic view at this spiritual hideaway. A one-of-a-kind adobe style tasting room with a genuine Native American tipi, sweat lodge, artifacts, picnic by our pond, or just take a walk out in the vineyard. Gianni showcases his personal stone sculpture creations & eclectic art collection from famous artists that he has collected from his journeys. As best described by our visitors "it is like a piece of heaven on earth". We purposely designed our tasting room to be family style so we can get close to our guests and have a meaningful conversation. We have a wonderful gift shop with unique finds, and we focus on giving you a unique and enjoyable experience, with wine & vineyard education while you taste. You'll be provided with honest information and no sales fluffs. Open daily from 11 a.m. - 5 p.m. We ask that reservations be made in advance for large parties, and private tours. Parking is limited, but it will accommodate limousines, tour buses, etc.
Our Bed & Breakfast.
Enjoy the Taos aesthetic. Our 5 private, individual casitas are carved into the mountaintop, and elegantly designed in the Santa Fe/Taos style. The original designs were inspired from the Taos Pueblo Native American reservation in NM. Each Casita is in the adobe style architecture, and every room offers panoramic views of our vineyards, orchards, the surrounding canyon of the Santa Lucia Mountains. Decorated with tribal artworks, highest quality tempurpedic beds, private bathrooms & patios with a cozy fireplace to make you feel at home. All the casitas are identical, open & spacious suites, and each unit is completely self-contained, with full privacy in mind. The entire property is gated, ensuring your secluded privacy. Enjoy plenty of pathways for sightseeing, peaceful wandering or to find that perfect spot for your inspiration.
In addition to our Bed & Breakfast, we have our guest house "House of Zin" on the west end of our property above our 5 acre Zinfandel vineyard. It comes with three bedrooms, two baths, full kitchen, living/dining room, private patio with BBQ, and grass/garden area for lounging. This is perfect for families, or multiple couples that would like to stay together and experience life in a vineyard setting.
If you are looking to escape your busy life and/or just want to shut down for a while, we then have the perfect place for you. There are no phones here, or any commercial hotel stuff. We promise you won’t miss any of it once you are here. What you will have is one of the most memorable and amazing experiences you’ll ever know. Life is too short to miss what mother-earth has to offer. We would love to share our beautiful location with you. The Bed & Breakfast or Guest House, Tasting Room, Courtyard and the Barrel Room can all be rented individually or separately for your personal & private events. Call or stop by for a private tour. We can provide our location, expertise, and outside resources to make your event a success.
We grow and offer; Zinfandel, Syrah, Merlot, our House of Reds Blend, Rose’ Mourvedre, Tannat, Malbec, & Tempranillo & our Zinfandel Port.
Gianni is passionate about making and producing big red wines, so he only planted what he prefered and expected to grow well on his land. His focus is on producing the highest quality fruit concentration through his farming practices, minimal irrigation, and low fruit yields. His philosophy is “I would rather make limited quality wines, than making too many varietals and be known for only one”. If you like the true taste of Paso fruit, then Wild Coyote can deliver exactly that. Our wines are close to 100% pure varietals, as compared to most other wines which are only about 80% accurate, so they can be legal. Our wines are aged completely in oak barrels for up to twenty-four months, and sometime even longer, until Gianni feels it is ready for release. He also does not believe in filtering his wines, that way you can truly taste the essence of his grapes. Also, he is not too shy in producing high alcohol wines (14-16 brix) as he believes the wines under 14% are done mostly on purpose to pay less taxes and appeal to the masses. “We will not compromise the quality of the fruit that can produce world class wines, just so that we can save a few bucks.”
