As the suave gentleman you are... when you're not wearing white, what are you wearing?

Dear Raul T.,

Whatever I wear always feels white, which is appropriate for just about any occasion where wine is to be shared. But when the mood strikes right, a denim cuffed shirt (open collar of course) feels right with a Zin. Paso Zin is Passion. It’s heritage. It exudes that cowboy culture we embrace in Paso Robles. And the Paso Wine Man style is casually elegant!

On a warm summer day, swim trunks are required. The wine? Viognier. Don’t forget the sunscreen…you may be there all day.

A roaring fire, some delicious confections, and a Cabernet Sauvignon with that special someone. My attire? I invite you to use your imagination...

Dear Paso Wine Man,
Which method is the preferred process for making a classic Rose wine?
#1 - Leaving the skins in the juice for a few days; or
#2 - Adding red wine to the mix in the end to get the desired rose color

Saignee** versus light skin contact versus a blend of white and red… That’s like comparing Michelangelo’s David, to van Gogh’s Starry Night to Frampton’s Comes Alive album. All great works of art in their own right and with different people appreciating them for different reasons. My favorite Rose? Cold. Somewhere between 45 and 55 degrees. A glass of Rose and a warm summer day…ah Paso.
